Cauliflower Fried Rice with Hazelnuts

Ingredients

  • 1/4 cup olive oil

  • 2 large eggs, beaten

  • salt and pepper

  • 1 small yellow onion, minced

  • 3 garlic cloves, minced

  • 1/2 cup carrots, diced

  • 2 cups sliced mushrooms

  • 1 tablespoon finely chopped fresh ginger

  • One 2lb head of cauliflower, grated, or frozen riced cauliflower

  • 4-5 tablespoons of soy sauce

  • 1/4 teaspoon red pepper flakes

  • 1 teaspoon rice vinegar

  • 1 teaspoon sesame oil

  • 1/2 cup frozen peas, thawed

  • 1/2 cup chopped roasted hazelnuts

  • Green onions for topping

Directions

  1. Scramble eggs in a Tbs of olive oil and set aside.

  2. Saute onions, garlic, carrots, and ginger in the remaining olive oil for 5 minutes. Add mushrooms and saute until soft.

  3. Add cauliflower, vinegar, red pepper flakes and soy sauce. Saute until cauliflower is done but not mushy. This cooks quickly. Add sesame oil, peas, stir in eggs and top with hazelnuts and green onions. Enjoy!
