Hazelnut Olive Oil and Fig Cake

Ingredients:

  • 1 1/2 cups hazelnut meal

  • 1 1/2 tsp baking powder

  • Pinch of salt

  • 1/2 cup granulated sugar

  • 2 large eggs

  • 1/4 cup extra virgin olive oil

  • 1 tsp vanilla

  • 2 Tbs lemon juice

  • Zest of 1 lemon

  • 8-10 fresh figs sliced in half

Instructions:

  1. Heat oven to 350 degrees.

  2. Line a 8-9 inch spring form pan with parchment on the sides and bottom.

  3. Combine dry ingredients.

  4. Combine wet ingredients.

  5. Mix together.

  6. Pour batter into spring form pan.

  7. Place figs cut side up on top of batter. You can also place some cut side down and pour batter over. We did some of both.

  8. Bake 45-50 minutes or until batter is set in the middle.

    This is a very moist and dense rustic cake, but quite delicious.
