Hazelnut Zucchini Bread
Ingredients
2 cups all purpose flour
1 cup hazelnut meal
1 tsp salt 1 tsp baking soda
1 tsp baking powder
1 Tbs ground cinnamon
1 tsp ground allspice
1/2 tsp ground nutmeg
3 eggs
1 cup vegetable oil
2 cups granulated sugar
3 tsp vanilla extract
3 cups grated zucchini
1 cup rough chopped natural hazelnuts
Directions
Grease and flour 2 8 x 4 inch loaf pans .
Mix together flour, spices, baking powder and soda, salt.
Beat eggs, sugar, oil, vanilla.
Combine wet and dry ingredients.
Add zucchini and nuts.
Bake at 325 degrees for about 50-60 minutes or until a toothpick comes out clean.
Cool in pans for 20 minutes. This freezes well.
